    Thoroughly excellent piece of work

    Though I've never been much of a cook, my experience with a couple of smaller, 20-year-old pieces of the original Calphalon have made me a big fan So, when it became necessary to learn to cook something more interesting than box dinners and canned soup, the Commercial, Hard-Anodized section of the Calphalon website was my first stop. I seemed like a solid frying pan would be a good start. The 5 Qt. Saute Pan seemed the most versatile choice, and I have found that to be the case. The design, materials, and craftsmanship were pretty much what I expected -- flawless. The material of the pan itself is a little lighter than my old pieces, which is just as well because the thing is huge. I think you might be able to fry a small buffalo in it. However, the performance is just as good as with my older pieces and perhaps a tad better. I will have to learn to use it more effectively. I've cooked several dishes in it already, and everything has turned out better than I might have expected (being a complete amateur) except for a chicken sauté which I cooked too long and was a little chewy. The pan heats and cooks quickly even on medium-low heat. There's nothing wrong with the pan; you just have to remember it's not a crock pot -- you have to pay attention to what you're doing. Actually, the slightly lighter weight is a real bonus, given the size of the pan. The handle on the front makes it easy enough to handle even if your wrists are not the size of a redwood. I was surprised at how easy the clean-up is. When the manual said you should be able to clean it fairly easily with a sponge and warm, soapy water and maybe swipe or two with a nylon scrubby I thought "Yeah. Right." But it's true. Cleanup has always been a snap even after my-ill-fated chicken sauté. I guess if you really turned something into charcoal in it, you might have to soak it some. In short, it was an excellent choice, and I am exceptionally pleased with the purchase.

    Many Uses

    This is a wonderful piece to have for cooking anything from a quick sauce to almost anything else. I mostly use it to make a quick pasta sauce and anything else I am going to cook as a sauté. I cleans up great, it stays at a good temp, and is very easy to store away.

    Can't be any happier!

    I bought my first Calphalon Commercial pot many years ago ( used). I really didn't understand the difference between these hard anodized interior pots and coated non sticks, so I figured that this pot would be short lived like all the other non sticks I've used over the years. Once they get all scratched up or start to peel, I pitch them and go buy another one. 

    I am pleased to say that day has never dawned and I still have that first pot almost 10 years later. I love the hard anodized interior without the 'non-stick' material to worry about flaking off.  They are perfect for cooking anything without any sticking, and clean up is a breeze too! I cater events for friends and am a home personal chef for a client, so my pots and pans really get a work out.

    This covered deep frying pan will give me more room for cooking large quantities for guests, and I love that I can brown food on the stove, cover, and then put the whole pan into the oven to finish.

    I am sold on Calphalon Commercial and have been slowly but surely replacing all my "insert other brand name here" pots with your product line to complete my set. I wouldn't consider owning anything else.

    Love its versatility!

    I use this saute pan for everything from frying meat to sauteing or braising veggies to making scrambled eggs. It's indispensable in my kitchen!
